I'm sitting on a ship in the middle of Sydney harbour. I can look across and see the Opera house and the Harbour Bridge. This would have to be one of the most impressive views in the city if not the whole of Australia. All I need now is a cocktail and perhaps a slice of this next recipe, that I prepared earlier, a Chocolate Cheese cake and I would be in total heaven. Happy Eating!!

Chocolate Cheese Cake
Base
125g plain biscuits
1/4 cup dutch cocoa
1/4 cup chocolate chips
80g butter
Filling
1/4 cup warm - hot water
2 teaspoons gelatine
250g cream cheese
1/2 cup milk
1/2 cup castor sugar
100g dark chocolate
1 cup of whipped cream
To make the base, place all the ingredients into a food processor and process until fine bread crumbs form. Tip the crumbs into a spring form tin and press down until the base is firm.
To make the filling, place the gelatine in the water and stir until the gelatine dissolves, then put aside.
In a separate bowl beat the cream cheese and sugar with and electric beater, then slowly add the milk until incorporated. Melt the chocolate either in the microwave or a double boiler, then stir into the cream cheese mixture along with the gelatine mix. Then slowly fold through the whipped cream and pour onto the base in the tin. Place in the refrigerator for 3 hours or until set. Before removing from the tin use a knife to cut around the edge so the cheese cake doesn't stick.
Serve with your choice of topping, or on its own.
I wish I could visit Australia! It's a bit of a long flight from here in England though and I'm kinda scared of the spiders! (: I love the fancy chocolate decoration you've put on the top, did you make it yourself? Even if you didn't it just looks gorgeous! :D

DeleteYeah you should visit, it is a very, very, very long flight from the UK. I can't say I enjoyed it. There are some really nasty spiders here, especially in Queensland, I don't see as many in Victoria, perhaps because its a little bit cooler. Doesn't England have some scary looking spiders?
The chocolate decoration is made with a little bit of baking paper, I made a piping bag out of it and then cut a tiny whole in the top. Then went wild with squiggles.

Oh my god, this cheesecake looks not only gorgeous but also delicious! I love the heaping stack of whipped cream on the center and the chocolate garnishments.

ReplyDeleteThanks xiaob, Thats true, but sadly you still have to wait for it to set. Its good for a hot day though, you want heat up the house by turning the oven on.
