Spreading the love with chocolate frosting



Phew I made it.... I didn't think I would... Happy Valentines day all you love birds! and of course all you single ladies and gentlemen. I hope you all had a fantastic day and got absolutely spoiled either by someone or you spoiled yourself.

I knew Valentines day was fast approaching and even had the foresight to borrow the little sugar hearts you see here from my sister, however it snuck up on me. So here I am 1 hour and 15 minutes before the day officially ends getting this post up. It was a huge rush but here it is, just in time for everyone on the other side of the world who might just be waking up.

Love Cakes

175g butter
1 1/2 cups milk
1 tablespoon Vinegar
5 eggs
2 cups sugar
4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda

Pre heat the oven to 160C

Place the butter, milk and vinegar into a saucepan and heat until the butter melts, The mixture will curdle so don't worry. Set aside.

In a separate bowl whisk the eggs and sugar until pale and fluffy with an electric beater. 
Sift the flour, baking powder and soda into another bowl. Then slowly add to the egg mixture along with the milk mixture. stir through until well combined. Pour into a 25x35cm slice tin

Bake for 30 minutes or until it bounces bake when touched. Leave to cool.

Icing/Frosting

200g milk/dark chocolate
240mls thickened cream
50g cream cheese (room temperature to avoid lumps)
35g white sugar


Your going to need three bowls for this.
Bowl 1: Place the cream into a bowl and whisk until it forms peaks, then place to the side.
Bowl2 : Place the chocolate in a heat proof bowl and place in the microwave to melt (you could use a double boiler instead).
Bowl 3 : Beat the cream cheese and sugar together using and electric beater until combined. Then slowly add the chocolate and stir until it has all be incorporated. Then using a spatular fold the cream in.


Cut the cake into desired shapes and ice, sprinkle with sugar hearts if desired
